6 T butter, melted
3 T grated parmesan cheese
8 medium unpeeled red potatoes, halved lengthwise
Pour butter into a 9x13 baking pan. Sprinkle parmesan cheese over butter. Place potatoes with cut side down over cheese. Bake uncovered at 400 for 40-45 minutes or until tender. Serves 8.

Roasted Vegetables
This is such a simple and delicious side dish. Nutritious as well.
vegetables of your choice (carrots, red potatoes with skins on, sweet potatoes, broccoli, cauliflower, peppers, zucchini, squash, green beans, mushrooms, etc.)
drizzle of olive oil
salt
pepper
other herbs that are delicious to try: garlic powder with rosemary or basil
Chop up vegetables and toss in a bowl with olive oil and seasonings to your taste. Roast on a greased baking sheet at 425 for about 20 minutes. NOTE: Potatoes and carrots will take longer... around 35-40 minutes... put them in the oven first, then add the more tender vegetables half way through if cooking multiple kinds of vegetables.
