This recipe came from a bed and breakfast in St. George called The Seven Wives Inn.
4 C oats
1/2 C canola oil
1/2 C sugar
2 eggs
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
1 tsp vanilla
1 1/2 C milk
fruit (fresh or frozen fruit like peaches, blueberries, or apples are really good, but dried fruit such as dried apricots are very good, too.)
Mix everything together in a 9x13 pan. (You can cut this recipe in half and use an 8x8 pan instead if you prefer.) Bake at 350 for 35 minutes. Delicious warm or cold. Serve with milk or yogurt.
